Kinryu Somen: Refined in Both Appearance and Taste

Nestled in the mountains and created to greet those visiting Oiwasan Nisseki-ji Temple in Kamiichi Town lies “Kinryu Somen,” a small family-owned restaurant that prides itself on its one-of-a-kind somen.

Everything from the noodles to the broth is meticulously made, ensuring every bite has a rich flavor. The noodles, which are personally hand-pulled, come from the Awaji Islands nearby, and to give it the rich umami flavor without the accompanying smell, the noodles are coated with a little oil and aged for three years! This process leaves you with firm noodles that have a taste unlike any other around.
 

When you take these specially made somen noodles and add them to the broth, the taste is amplified. Toyama is famous for its pure waters, and said water plus the bonito, kelp, mushrooms, chives, and more produce a broth that has a good balance of sweet and salty flavors, mild and easy to drink. Be sure to gently mix in the ginger to enhance the taste even more, and try not to let the broth drip off your noodles while you eat.

The somen is easy to eat even in hot weather, and Kinryu Somen is the perfect place for a break before or after you visit Oiwa Nisseki-ji Temple. Gratiner: Enjoy Baked Dishes and Sweets in a Luxurious Space

Gratiner is a cafe located in the town of Nyuzen. Gratiner (French for “browning food in an oven”), specializes in gratins, dorias, and just about anything delicious! Also, in their aim to consume locally, the restaurant uses many ingredients produced in Toyama Prefecture, especially those from Nyuzen.

For lunch and dinner, the restaurant offers mainly doria and gratin, as well as salads made with local vegetables. For the doria and other sauces, they use Nyuzen rice flour instead of wheat flour.
 

For dessert, the restaurant offers their signature "brûlée," as well as a dessert that changes monthly, and mini parfaits made with fruit sourced from local farmers. In summer, they also offer shaved ice made with ice and homemade sauce. When you visit Toyama, be sure to experience its rich food culture!
