Gokayama gassho-zukuri village is nestled deep into the mountains. Gokayama is a world heritage site and also plays an important role in ensuring the survival of its unique food culture. A flagship item of this culture is “Gokayama Tofu”. Tofu is a healthy food made from soybean. Most tofu is soft like pudding and breaks apart easily, however Gokayama Tofu is characterized by its hardness and lack of moisture. Gokayama Tofu faithfully draws out the natural flavours of soybean, making it a delicious food to eat as is, served cold, with salad and more.
