Mino Sushi was established in Meguro, Tokyo, making classic Edo-mae sushi. Using traditional techniques from Edo (the old name for Tokyo) such as simmering, salting, and light pickling, local seafood from Toyama is prepared to maximize its flavor and delicate texture. Mino Sushi uses many traditional Edo-mae sushi ingredients, such as boiled clams, conger eel, and kohada (dotted gizzard shad), along with daily catches from Toyama Bay. The rice is a key component of the sushi, and Mino Sushi uses 100% Koshihikari rice for its firm grain. The restaurant, which relocated to Toyama in 2018, is a simple modern space with a long counter, putting the focus on the work of the chef, and the fresh ingredients. Enjoy the best seafood and rice from the Hokuriku region, with locally brewed sake.
