Every morning, Edomae Sushimasa buys freshly caught fish directly from the Himi Fisherman's Wharf. The shop master hopes that "customers feel the season as they dine on the catch of the day," and accordingly, seasonal specialties line the counter. Spring features local specialties japanese glass shrimp and firefly squid, and summer brings Himi Pacific bluefin tuna and Iwagaki oyster. Although served year round, autumn and winter are known as the best season for many items such as snow crab, red snow crab, Himi yellowtail, filefish, and kaibai ivory shell. The koshihikari rice which serves as the base for the sushi offers a delicately sweet flavor. "The sushi is great, and the cooked and fried menu items are also superb" says a regular customer. Edomae Sushimasa has been in business for over 30 years, and is family owned and operated. Frequented by locals and celebrities alike, it shouldn't be missed by anyone visiting Toyama!
